Vegetable Pasta Soup

My whole family even me are Pasta lovers. I try all kinds of recipes with pasta, but this time I thought to make something different, something more healthier than usual preperations. So, I made this healthy pasta soup with lots of veges for a quick lunch for me and my daughter, who is a die hard fan of pasta. This soup is loaded with vegetables and no cheese or fat at all and it tastes great. For weight watchers like me, it's a filling and healthy dish, which is full of fibre, too. So, sending this healthy, easy-to-make warm bowl of soup to Priya's Fast food not fat food


Ingredients :
Pasta(any kind, I used Rotini) : 1 Cup(uncooked)
Vegetable (carrot, green beans, cauliflower, cabbage, Green peas) : 2 cups(cut into medium-big chunks)
Onion : 1(medium)
Garlic : 2 cloves(grated)
Green/red Chilli : 1-2(desseded and chopped finely)
Tomato : 2(medium)
Vegetable stock/water : 2 cups
Milk : 1/3 cup
Lemon juice : 1 tblsp.
Oil : 2 tblsp.
Salt and black pepper to taste
Dried basil leaves for flavouring

Method :
  • Bring a large pot filled with water and 1 tbsp salt to a boil over high heat. Add pasta and cook for 10-12 minutes or until just done, not overcooked. Drain and set aside.
  • In another big pot(here we're going to make the soup), heat oil, add sliced onion and grated garlic. Stir for a minute or two, then add chopped up tomatoes. Stir until tomatoes get pulpy. 
  • Then add all vegetables. Stir in for 1-2 minutes, then add water or stock. You can add your choice of vegetables here. Bring to boil, cover with a lid and simmer. In soup, vegetables should be tender/just done, not over boiled. When vegetables are almost done, add cooked pasta. Add milk and cook for another 5 minutes.
  • Season with salt, lemon juice and black pepper as per your taste. Remove and garnish with dried basil leaves or any Italian seasonings of your choice. 
Enjoy this hearty warm bowl of soup with freshly made toasts or can have it without anything.
