Scrambled Egg Speghetti ~ Egg pasta

Today's recipe is the fastest pasta recipe I have ever made. One day I had very little time to prepare something for my daughter's lunchbox. Suddenly this recipe came to my mind and I started cooking it. I had no idea that the end result will be so awesome. It tasted awesome and egg-lovers will love this treat. It could be a quick evening snack or kids' lunchbox menu or a fastest meal for anybody. It's very filling and nutritious with all the goodness of egg and pasta.

Ingredients :
Spaghetti
Egg : 2-3
Vegetables of your choice : Carrots, green beans, Capsicum
Onion : 1(big, thinly sliced)
Green chilli : 1-2(finely chopped, optional)
Salt to taste
Black pepper to taste
Dried Italian herbs(mixed) : 1 tsp.
Oil : 1 tblsp.

Method :
  • Take a big bowl, boil water, add 1 tsp. oil and a pinch of salt. Oil will prevent spaghettis to stick to each other. Break spaghettis and add into the boiling water. Cook speghettis as per direction, approximately 10 minutes or until they are just cooked, but not overcooked. It definitely depends on the thickness of spaghettis. Drain the excess water and set aside.
  • Heat oil in a pan, add chopped vegetables of your choice and saute them until they are nearly done. Now beat egg white and yellow together with a pinch of salt and chopped up green chillies(adding green chillies is completely your choice, if you want you can skip this) and pour directly into the pan. Stir with a spatula just like you do while making scrambled egg. 
  • When eggs are scrambled, add cooked pasta, mix well. Add seasoning i.e. salt(remember we added salt in the egg before)and black pepper according to your taste. Add Italian herbs and toss everything well.
  • Serve hot from the pan........enjoy
Note : You can prepare this with any kind of pasta.
