Chocolate-Ginger Bundt Cake

This cake was made on demand of my daughter. It was a treat before her exam starts, so she can energize and concentrate on her study. She can live on just Chocolate cake. I made plain chocolate cake before. This time I wanted to add some extra flavour to plain chocolate cake. So, searched at my favorite Martha Stewart's Food page and found this easy recipe. I thought, Ginger and cinnamon will give a fine flavour to plain chocolate cake and I was right. It was yumm and fluffy. It's a full-proof recipe. I will recommend everyone to try this recipe at least once.

Ingredients :
All-purpose flour : 1 cup
Butter/margarine : 1/2 cup (1 stick), in room temperature, plus little more for greasing the pan
Unsweetened cocoa powder : 1/2 cup, plus more for dusting the pan
Molasses : 1/2 cup (recipe asked for it, but I skipped it, as I was out of it)
Light-brown sugar : 3/4 cup
Luke-warm water : 1/4 cup
Egg : 2
Milk : 1/4 cup
Baking soda : 3/4 tsp.
Coarse salt : 1/2 tsp.
Ground ginger : 1 tsp.
Ground Cinnamon : 1 1tsp.
Finely grated fresh ginger : 2 tsp.
finely grounded sugar : 2 tblsp.(for decoration)

Method :
  • Preheat oven to 180 degrees C. Grease a Bundt pan with butter and dust the pan with cocoa powder. Tap to remove the excess cocoa powder, set aside.
  • Put butter, molasses(if using), brown sugar, and 1/4 cup water in a medium saucepan over medium-low heat. Cook, stirring constantly, until butter has melted. Transfer mixture to a large mixing bowl. Let it cool for 5 minutes.
  • Add eggs, milk, and grated ginger to the molasses mixture; whisk to combine. Sift together flour, cocoa powder, baking soda, salt, ground ginger, and cinnamon in another bowl.
  • Gently fold the flour mixture into the molasses mixture until just combined. Pour batter into prepared pan. Bake cake until a tooth-pick inserted into center of the cake comes out clean, about 30-45 minutes. Let the cake cool completely in pan on a wire rack.
  • Invert cake, and very carefully unmold onto a cake stand or a large serving platter.
  • You can easily decorate any cake with finely grounded sugar. Just sprinkle allover the cake, this gives the cake a very fine look, especially on Chocolate cake.
