Pasta in Roasted Tomato & Garlic Sauce

You all know that me and my daughter, both are a big pasta fans. So, this recipe was in my to-try list for long time. Tomato and Garlic are roasted in oven with some Italian herbs and then made into a sauce, the pasta is then cooked in the sauce with some added cheese. The flavour of roasted tomatoes and garlic is heavenly.
  When I saw yesterday some red, plump tomatoes in my refrigerator, don't know how but this recipe suddenly clicked on my mind and I immediately made my mind to make this pasta for our dinner. It was quite late to make this recipe for dinner, but once I make up my mind, it has to be only that for dinner. This recipe doesn't take much time to make but need some preperation time.
So, lets go to the recipe now............


You Need :
Pasta of your choice
Tomatoes : 4-6, cut into 4
Garlic cloves : 7-8, big cloves, crushed
Salt and black pepper to taste
Italian dry/fresh herbs
Olive oil or any white oil : 2 tblsp.
Onion : 1, big, sliced
Tomato : 1, chopped(optional)
Bell Pepper/capsicum : 1, chopped lengthwise
Fresh Cream : 2 tblsp.(I used Amul Fresh Cream)
Mozzarella/permesan/cheddar cheese : 1/2 cup(grated)

How To :
  • Pre-heat your oven to 200 degreeC. In a oven proof dish, arrange chopped tomatoes and garlics. Sprinkle some salt, black pepper and any Italian herbs. Drizzle 1 tblsp. olive oil preferably, if not available use any white oil. Mix well and put into pre-heated oven for at least 45 minutes to 1 hr. 
 
  • Finally after 45 min.-1 hr. it will look like this, mine took 45 minutes. Cool down and then make a paste in the mixer.
 
  • Meanwhile, cook your pasta in a large bowl of boiling water, adding a pinch of salt and 1 tsp. oil. Cook till just done and drain. Do not throw the drained water. Keep aside.
  • Heat 1tblsp oil in a pan. Add sliced onion and capsicum/bell pepper, stir and when they softens a bit, add 1 chopped tomato, stir for a minute till tomatoes get soft, now add roasted tomato-garlic sauce. Mix well, add pasta and mix well with the sauce. Add fresh cream and 1/3 cup of pasta-drained water.
  • Mix, add grated cheese and mix well. Season with salt and black pepper. When sauce are nicly coated with pasta, remove and serve hot with some extra grated cheese on top.
