Spaghetti Alla Carbonara ~ Creamy Italian delight

  Hello everyone ! I am back after almost 2 weeks. This is my first post of this year. It was hard for me to post something after this so long break. But as you all know, my event, Spotlight : Continental is going on, so thought to post something continental as my first post of this year. Among all continental Cuisines, Italian is the most preferred and loved one in my family. I often make this creamy Spaghetti Carbonara, but happened to post this recipe here. But now is 'the' time........
   What is Spaghetti Carbonara? It is one of the most popular Italian pasta dish. This carbonara recipe combines cream, eggs, cheese and bacon. The traditional Italian version omits the cream, but most people in the United States use a bit of cream in their pasta carbonara. Spaghetti Carbonara is one of the most popular Italian pasta dishes. This carbonara recipe combines cream, eggs, cheese and bacon. Spaghetti is usually used as the pasta, however, fettuccine, rigatoni, or any other varity can also be used.

    I never use bacon in my carbonara, as it's not available in my place, but use rest of the ingredients for sure. In this recipe, you basically just stir a few whisked eggs into the pasta as soon as it is cooked and drained, and the heat of the pasta will cook the eggs and make a creamy sauce coating the pasta. Traditional version, also doesn't use any vegetable, but I love some carrots or spinach in there. Little bit of variation doesn't hurt, does it? I believe, the food you eat should satisfy your tastebud. You can try my version, won't regret, I guarantee.

Now to the recipe......................

You Need :
Spaghetti : broken in half

Vegetables of your choice : carrot/corn/spinach/broccoli or combination[you can also skip totally]
Eggs : 2
Heavy cream : 1/4 cup(can substitute with full-cream milk)
Parmesan cheese : 1/3 cup
Mozzarella/Cheddar cheese : 1/3 cup(grated)
Garlic: 3-4 pods, finely chopped
Fresh parsley : 1/3 cup, chopped
Oil/Butter : 2 tblsp.
Salt to taste
Black Pepper to taste



How To :
  • In a small bowl, whisk together 2 whole eggs, cream/milk,  a pinch of salt and black pepper. 
  • In a big saucepan, boil water adding 1 tsp salt, add the broken spaghettis and cook for 10-15 minutes or until al dante (just cooked). When done, drain the pasta, but do not throw the pasta water, we'll use it in our cooking.
  • In another pan, add oil/butter, add slice vegetables, I used carrots, spinach and corn, saute till they are just done, add chopped garlic in there, saute for another 2 minutes. Remove from heat and add egg-cream mixture, do not let it set, stir vigorously, add most of the cheese, keeping little bit for garnish. 
  • Immediately, add drained pasta and mix well with the egg, cream and cheese mixture, add reserved pasta water in there to make it more creamier. Season with more salt and black pepper, if needed. Also add fresh parsley in there. Mix and remove from heat, when you got a smooth creamy sauce perfectly coated each spaghetti. 
  • Serve immediately garnishing with rest of the grated cheese and some more parsley. Heaven!!!
