Vegetable Stuffed Buns from Anwesha's Blog

     This week, I'm going to introduce you to an avid traveler and a foodie, Anwesha Bhattacharya. She mostly blogs about her travel experiences from allover the World with full details about the place and everything you need to know if you want to visit there, also about the food and food joints available at that place. Along the way, her interest transformed her into a foodie and she also blogs about her kitchen experiments too in her blog, Peanuts on the Road. Her blog name is interesting, isn't it? There are reasons behind it, too. Anwesha is doing her Ph.D from IIT Kharagpur, a place which is far from her home and she travels home every weekend by train, and in her words, " Peanuts are the quintessential flavors of travel, the very essence on being on the road." That's why she gave her travel blog that name. She is truly a gem of a person, very friendly and very sincere about everything she does. I am honored to know her personally. She is a very sincere and passionate member of our group, Kolkata Food Bloggers.


    As a part of this event, we are supposed to try out one recipe from her blog and post in our page. I've tried her Spicy Meat buns, where she stuffed her buns with a spicy minced meat filling, instead I stuffed my buns with a mix-vegetable filling. I exactly followed her recipe for making buns, just changed the filling. You can use your choice of vegetable combo for the filling. It was first time I've tried this kind of recipe far away from my comfort zone, but I was amazed how easy this recipe was to create and the taste was mind-blowing. I served them with a Brocolli & Cauliflower soup and it was Yummmmmy.

Here is Anwesha's Stuffed Meat buns recipe......................

For my version of Vegetable Stuffed Buns, follow below recipe :::::::: You Need : (yields 12 medium sized buns)
For the bun dough :

Instant Dry yeast :1 tbsp
lukewarm water :1/4 cup
Sugar : 2 tbsp  
Milk (lukewarm) : 1/4 cup
Egg(beaten) : 1
Egg yolk : 1, (beaten, for egg wash- mix 1 tsp. of milk into beaten egg for egg wash)
Butter : 2 tbsp
Flour : 1 3/4 cup (required more during the process to knead)
Corn flour : 1 tblsp.
Salt : 1 tsp  
Vegetable Oil : 1 tbsp+little to brush on buns and to grease the baking tray

For the filling :
Potato : 1, chopped
Carrot ; 2
Green Peas : 1/2 cup
Cumin seeds :  a fat pinch
Onion : 1, chopped
Ginger paste : 1 tsp.
Green chilli : 1, chopped
Tomato ; 1, chopped
Turmeric powder : 1 tsp.
Red Chilli Powder : 1 tsp.
Salt to taste
Oil : 1 tblsp.
Fresh Coriander leaves 

How To : 
  • For making dough : Take lukewarm water in a cup and dissolve the sugar in it. Add the dry yeast in there, mix and set aside for about 10 minutes in a warm place. Once the above mixture is frothy, add milk, the beaten egg and combine. In a mixing bowl, combine the flour, corn flour, salt, oil and butter and incorporate well. Add the liquid yeast mixture to the dry mixture and mix well. Add more flour, if needed, to get a soft dough. Cover the dough with a moist cloth and place in a warm place and let it rest. After a period of about half an hour to an hour, it should double in size. After it doubled in size, knock back the air, knead well and leave it to rise, again for some time in a warm place. This time it'll rise even faster but not double in size.
  • For making he filling : For making filling, first boil potatoes, carrots and green peas till done, mash a little and keep aside. Heat oil in a pan,temper with jeera/cumin seeds, add chopped onion, stir fry a little, then add ginger paste and chopped green chillies. Stir fry a little, then add tomatoes, saute for 2 minutes. When tomatoes mashed up, add boiled vegetables, turmeric and red chilli powder and salt to taste. Mix well and cook for another 1-2 minutes. lastly, mix chopped coriander leaves and your filling is ready. 
  • Assembling the buns : Knead the dough and divide into 12 dough balls. Take each ball and flatten them a bit using a rolling pin. Put 1 big spoonfull of the filling at the center of the flatten dough and gently secure the ends. Carefully smooth the surface so there should be no crack. In a greased baking tray, arrange the stuffed dough balls, brushing the top of each buns with little oil and let it rest for about 15 minutes.
  • Baking : Preheat your oven to 190°C, brush on the egg wash (for a beautiful glaze on the dinner rolls) before the tray into the oven, bake for about 20 minutes or till top turns golden brown. After 20 minutes,if you don't see the top is browning, put the baking tray into grill option for about 3-4 minutes or you just totally avoid it if browning is not important to you. I did for 4 minutes, but the texture didn't change a bit. 
 

 Enjoy these savoury buns with a warm soup, I served them with a Broccoli & Cauliflower Soup.
