Creamy Baked Pasta with Vegetables

This pasta dish is staple at my home. It's very easy-to-make, and in no time you can serve healthy, filling and yummy pasta dish to your family. Especially kids love this dish. I make it healthier adding lots of vegetables. In Winter, I make it more often, as I have more option of adding vegetables. You can add cooked chicken breast too if you want....

You Need:
Pasta(any kind)
Vegetables(carrots, spinach, broccoli, cauliflower, Capsicum, green beans, corn etc.)
Onion : 1(medium, sliced)
Garlic : 4-5 cloves, grated
Tomato sauce/puree : 1/2 cup
Fresh Cream : 1/2 cup
Italian herbs : 2 tblsp.
Salt and black pepper to taste
Oil : 2 tblsp.
Mozzarella/parmesan cheese to sprinkle over the top : 1 cup, grated

How To :
  • Preheat oven to 175-180 degree C. Grease a oven-proof pan with butter.
  • Heat water in a wide bowl and cook pasta in there until just tender. Drain and keep aside.
  • In another big bowl of water, blanch vegetables until just tender. Drain and keep aside.
  • In a pan, heat oil, add sliced onion and grated garlic, saute till brown, add tomato sauce/puree in there, add vegetables and pasta and mix well. Season with salt, black pepper and Italian herbs. Cook for 2-3 minutes so that everything well-mixed but not completely dried.
  • Add fresh cream and mix everything well again. Now pour the whole pasta and vegetable mix into the prepared baking pan. Sprinkle grated mozarella/Parmesan cheese allover the pasta. Bake for 12-15 minutes.
