Super Healthy Dry Fruit and Nuts Cake for New Year, New Beginning

I know I'm off from blogging world for last 2 weeks and I Know you will forgive me for that as last 2 weeks were vacation season for everyone. I've also gone for a nice 3 days vacation in the beaches. Now I'm rejuvenated enough to blog and share my recipes with you all......And I want to wish all my readers and blogger friends a Very Happy, Healthy and Fulfilling New Year..May this year keeps you in good health, fulfills all your wishes and makes you the happiest person in the World

This is my 1st post of this year and it has to be a sweet beginning. Between the vacation and the hectic schedule I've managed to bake a super healthy dry fruit and nut cake for my family on the eve of Christmas. This cake can be a great accompaniment with evening tea or coffee or a healthy and yummy snack for kids as well. I've loaded it with all kinds of dry fruits and 3 different kinds of nuts. I made this kind of cake for the first time and I am super surprised with the outcome. It was super delicious. Everybody in my family loved it, so I'm dying to share with you the recipe..Here goes

Ingredients :
All purpose flour : 1 cup
Whole wheat flour : 2 cups
Baking Powder : 1 tsp.
Baking Soda : 1/2 tsp.
Salt : a pinch
Butter/margarine : 200 gm.(in room temperature)
Sugar : 1 cup
Eggs : 3
Warm milk : 2/3 cup
Dates(Pitted & chopped) : 1/2 cup
Raisins : 1/2 cup
Mixed Nuts(chopped) : 1 cup (almonds, walnuts & pistachios)
Orange peel : 2 heaped tbsp.
Orange Juice : 1/2 cup

How To :
  • Preheat oven to 180 degree C. Grease your baking pan with a little butter and sprinkle little amount of flour allover the pan. Keep the pan aside.
  • In a medium bowl, mix butter and sugar. In that, add eggs one at a time and whisk till creamy. Add orange juice and orange peel in there and mix.
  • In another bowl, mix the dry ingredients together- both the flours, baking powder, baking soda, salt and mix together. Add dates, raisins and nuts in the flour and give all-together a good stir. 
  • Now slowly add this flour mixture into the butter-egg mixture. You can add lukewarm milk at this time to fold together all the flour mixture. After all the flour added, whisk vigorously for 5-10 minutes to make a creamy batter.
  • When done, add the whole batter to the prepared baking pan and bake for 45-60 minutes or until done. To check it's done, insert a toothpick in the center of the cake, should come out clean.
  • Cool on wire rack, cut and serve. You can store this cake in a air-tight container for at least 7-10 days.
