Chichingey or Snake Gourd Posto with Potato & Onion

Snake Gourd is a vegetable which is ideal for summer because of its water content and it is more or less available throughout the year. It is another of my favorite vegetables, which is very less in fat and high in fibre. The health benefits you can get from this humble vegetable is uncountable. From Cough to liver disease it helps in everything. It is one such vegetable you should include in your diet daily. The fibre found in this vegetable is extremely beneficial for your stomach and it is known to combat many stomach disorders. I'll share one easy but tastiest recipe today where Snake gourd is the star ingredient from my kitchen.

Posto or poppy seed is a beloved spice in any Bengali household and we combine almost all(ok, not all) vegetables with posto. But usually, posto is cooked without onions, cooked specially on the full-vegetarian day, when Bengalis don't eat onion and garlic at all. But in this recipe we'll combine some potato with snake gourd and adding little onion, we'll prepare a finger-licking dish which takes very less time to cook.

You Need :
Snake Gourd : 1 or 2
Potato ; 2, medium, cut into medium cubes
Onion : 1, sliced
Green Chillies : 1 or 2
Black cumin or nigella seed : 1 tsp.
Posto or poppy seed : 2 tblsp.
Turmeric powder : 1 tsp.
Red Chilli Powder : 1 tsp.
Salt to taste
Oil : 1 tblsp.



How To :
  • Take a snake gourd, carefully remove the upper thin skin using a sharp knife very carefully. Then cut it into rings first, then cube each ring into halves. Cut the potatoes into cubes and pressure cook them till just done. Soak poppy seeds with little water for 30 mins and then grind it into semi-coarse paste with green chillies. Adding green chillies is completely optional, you can skip it. Keep aside.
  • Heat oil in a pan, when hot, temper it with black cumin seed followed by onions along with snake gourd pieces. Stir fry onion and snake gourd pieces for 2-3 minutes adding a pinch of salt. When snake gourd pieces turn light brown, add cooked potatoes and stir fry for a minute or two.
  • Now add grind poppy seed paste into the pan, add turmeric and red chilli powder and mix well with the veggies. Stir fry it for 2-3 minutes so that raw smell of poppy seed go away.
  • Then add 1/2- 3/4 cup of water into it just to cook the snake gourd and it doesn't need much time to cook. Cover with a lid and let it cook in medium flame till all water evaporates and veggies are well cooked. Check the seasoning and remove from heat when done. 
  • Your Snake gourd or Chichingey( as we call it in Bengali) Posto is ready yo devour with warm rice and a lentil soup(dal) by the side. 

It is a comfort food for me and always enjoy it during hot summer days when I lose my appetite for any non-veg food.
